So, I grew up in Central Florida which is like growing up in the rainforest in terms of heat and humidity. I never thought anything of it, but for some reason, I am no longer as tolerant of incessant heat.  I am thinking that this has something to do with the fact that I have always been able to dress for the weather…that is, until I had to wear a uniform every day!  My uniform is extremely stuffy and hot…especially because it is flame retardant.  The other thing is, I’m not used to sweating while sitting at a computer, INSIDE!  The A/C is broken at work if you haven’t caught on.  It was 85 degrees inside today…not conducive to high energy levels or good moods!  I need to keep myself calm and breathe through it, but sometimes it gets the best of me 😦 I really hope the air is fixed tomorrow, but if it isn’t, at least I will have the heat to practice in again 🙂 (trying to look at the positives)

I started my day off with a 5AM workout and unfortunately woke up at 4:36AM ON MY OWN! I had to use the restroom, but couldn’t really get back to bed…don’t you hate that??!

I did an interval workout and alternated miles running at an 8:00 pace to a 6:40 pace and kept that up for 6 miles. I was exhausted afterward, but very proud of myself! I did some abs and then hopped in the shower.

I made a friend at my gym! She is probably in her 60s (40 years my senior) and her name is Karen 🙂 Nice lady. We always have our lockers near each other in the morning so we have bonded. Why is it that I always meet my friends in the locker room? 🙂

Work has been slow lately, so I got to work at 7:40 and finished my work for the day around 9:00. The rest of the day I spent networking, blogging, and fending off my negative attitude from the excessive heat.

I found this recipe on the blog Eat Live and Run for vegan meatloaf and was astounded that I had all of the ingredients minus one or two, so I decided to make it!

Go to the this link to get the recipe and try it yourself! It was pretty good, but I think I needed to cook it longer 🙂

Here are the pictures from my cooking adventure!

1. I cooked the lentils (mine were precooked and frozen) in a mixture of 1 cup Roasted Red Pepper Soup and 2 cups Chicken Broth (way to much liquid for pre-cooked lentils).

I simmered the lentils for about 30 minutes.

2.  Then, I chopped up onion, carrots, and cucumber.  The recipe called for celery, but I didn’t have that, so I threw in my cucumber.

Then, I sauteed the veggies in 1 TBSP of extra virgin olive oil. The recipe called for 2, but I thought that was too much for my amount of veggies.

3.  I sauteed the veggies until they were translucent and added garlic, salt, pepper, and oregano.

4. Then I added in my toasted walnuts and transferred the veggies to another bowl. Then I added in my flax egg!

5. Then I added in my GF breadcrumbs.  I wouldn’t recommend buying these…they taste like styrofoam and unfortunately, overpower whatever you are eating.  From now on, I will make my own as needed from a piece of GF bread.

6. I threw this all into a greased loaf pan and topped it with the special sauce. Into the oven for 30 minutes at 350 degrees.

I accompanied this with some leftover veggies and my roasted butternut squash! Yummy!

Now I am pooped.  I am enjoying getting to bed at 9:30 every night 🙂
